My sweet husband is usually the main chef for Thanksgiving Day, and we are so blessed by his culinary skills. However, he is also a bus operator with TriMet and this year he is working on Thanksgiving until 2:00 pm. Some years, we’ve delivered Thanksgiving dinner to him on his route, some years we’ve celebrated other days. This year, my middle daughter decided she wanted to cook and have dinner on Thursday, so she’s coming over tomorrow and we will prep the meal for 15 family members and friends.
The trickiest part about cooking this meal, one so full of traditions and memories, is how to get everything on the table at around the same time. We have a small window this year, since my son and his fiance both have to work as well and only have their one hour lunch window. So, we are eating between 4:00 and 5:00 pm.
If we want that to be a reality, we need to get our timing down just right. I am a numbers-geek so went to work on my trusty spreadsheet. We are cooking enthusiasts so have a variety of appliances to help us out: a roaster that my mom gifted us with years ago and the perfect size for the turkey; and three crockpots.

Apple Sausage Stuffing
1 lb bulk sausage (we use Jimmy Dean sage flavored)
3 large granny smith apples (peeled, cored, chopped)
1 large onion, diced
1 cup celery, diced
4 cups bread cubes/croutons
2 eggs, beaten
1 1/2 teaspoon salt
Brown sausage, breaking into small pieces. Remove from pan and set aside in large bowl. Cook apples and veggies in the drippings for about 10 minutes. Add to sausage along with remaining ingredients. Combine well, then stuff into turkey or bake separately at 350 for 2 hours/crockpot for low for 3-4 hours.
