In a special weekend edition of our CROCK-tober series, I’m sharing my crockpot freezer cooking session. Years ago, when I had four kids at home, I used to regularly follow the principals of once-a-month cooking and fill up my freezer with meals that required little to no work for my kids to cook up or for me to put into the crockpot before heading to work. Now, we are down to just three of us at home, but time is still at a premium. Which is WHY I love my slow cooker – and filling my freezer with slow cooker-friendly recipes just makes my life easier!
Here’s a snapshot of the ingredients:
We assembled fifteen (15) different meals in about three hours – so three weeks worth of weeknight meals. Plus I still have leftover ground beef, pork, and chicken in the freezer to use for other meals!
The key to a fast freezer session is working assembly-line style and prepping all ingredients first. My husband LOVES to chop vegetables, so he did all that for me, but a food processor works equally well if you don’t also have a willing husband. =) He also cut up the pork and chicken for me; what a guy! Then, I labeled all bags ahead of time, using a Sharpie. And when filling bags, always roll down the top to keep the seal clean.
