Day 21 of our CROCK-tober series – we are huge fans of Thai foods. You gotta love an easy recipe like this!
CROCKPOT THAI BEEF CURRY
1-1/2 pounds round steak, cut into strips
1 sweet red pepper, cut into strips
1-1/2 cups coconut milk
1 tablespoon red curry paste
1 tablespoon lime juice
1 teaspoon fish sauce OR soy sauce
Place the steak and red pepper into crock. In a bowl, mix together the coconut milk, red curry paste, lime juice, and fish sauce (OR soy sauce); pour over steak. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
