Chorizo Chicken Enchiladas

Ingredients:
1 family-size can Campbell’s® Condensed Cream of Chicken Soup or Campbell’s® Condensed 98% Fat Free Cream of Chicken Soup
1 (16 ounce) container sour cream
1 small can diced green chiles
1 can diced olives (optional)
2 cup shredded cheddar cheese
1 lb ground beef chorizo
4 cups chopped cooked chicken (I usually boil 3 breasts and rough chop OR use a rotisserie chicken)
10 Flour Tortillas, slightly warmed

Directions:
In medium skillet, brown the chorizo over medium heat until cooked through. In a large mixing bowl, combine soup, sour cream, chiles, olives, and 3/4 of the cheddar. Stir in the chorizo and chopped chicken.

Place the tortillas on a plate and warm in microwave about 10 seconds. Spread about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in large shallow baking dish (I use a 9×15). Spread any remaining filling on top and sprinkle with remaining cheese. Cover with foil.

Bake at 350 degrees F for 40 minutes or until hot. I remove the foil at the end and broil until the top is brown and crispy.

Menu Monday #4 Link Up

Wow, I can’t believe it’s March already — and Daylight Savings Time starts this weekend.  Amazing.

We have a busy week ahead, just like everyone else.  But, my family IS my priority.  I just found a great challenge on Six Sisters’ Stuff

During the month of March, have dinner with your family four times per week, for four weeks.  Help build families one meal at a time.  Comment below if you decide to join in on this challenge — I am!

Here’s my family menu plan:
Monday – CP Pork Roast with Brown Rice Risotto
Tuesday – Cheese Tortellini with Alfredo Sauce (youth group/bible study tonight)
Wednesday – Cream of Broccoli Soup
Thursday – CP Chili with Cornbread
Friday – Nachos (Bunco night – spinach turkey wraps for a St Patty’s snack)
Saturday – Cheesy Chicken Enchiladas
Sunday – Homemade Pizza Bar with Salad

Menu Monday #3

Okay, I guess it’s Monday again!  They come so… weekly.  I will get this down to a science and post on Sundays one day.  In the meantime, let me share what our plan is sketching out to be.  (And, yeah, finally got to go to the grocery store so it’s not just freezer frenzy and pantry pickins!)

Monday – Beef Curry with Rice Noodles
Tuesday – Chili and Corn Muffins (youth group/bible study tonight)
Wednesday – Nacho night
Thursday – T’s birthday sleepover so pizza for the girls (No school tomorrow)
Friday – Sweet and Sour Pork Stirfry
Saturday – Crockpot Beef Stroganoff
Sunday – Meatloaf with Potato Crust

Does any else use Cozi.com??  A friend at work shared this app with me, so I’ve been experimenting.  While we aren’t using it to its full potential, I do like having a spot to save my recipe ideas that isn’t tied to a particular computer/software.  And, I can generate a shopping list, plus the entire family shares one password.    When I can’t think about WHAT to plan for dinner, I scroll through our family favorites and I’m good to go.   And, it’s FREE!
